The Bitte Selection

A yearly list of the restaurants running on Bitte that look after their guests best — judged on what actually happened, not on what anybody claims.

Why we are doing this

An independent restaurant competes for attention against national chains with marketing budgets it cannot match. A guest scrolling a list of twenty places has almost nothing to go on: a photograph, a delivery time and a price. The kitchen that quietly gets everything right looks exactly like the one that does not.

The Selection exists to close that gap by a little. One mark that means something specific and that a restaurant cannot buy, shown where its guests actually meet it — its own site, its own menu, its own window — so that doing the work well is worth something on the page as well as in the kitchen.

What it is

Once a year we look at every restaurant running on Bitte that has traded long enough to be judged fairly, and publish the ones whose guests were looked after best. Those restaurants carry the Selection mark for that year on their own website and menus, where their guests actually see it.

The year is part of the name. A restaurant is in The Bitte Selection 2027, not simply “in the Selection”. Standards slip, chefs move on and kitchens change hands. A mark that never expires stops being a judgement and becomes a decoration, so this one is awarded for a year at a time and has to be earned again.

What it is based on

Everything the assessment reads is something that already happened and was already recorded — an order that ran late, a refund that was raised, a guest who came back. None of it is a survey, none of it is a self-declaration, and none of it can be bought.

  • Getting the order right

    How often an order leaves the kitchen complete and as the menu described it, measured by the refunds and complaints raised against it.

  • Keeping to the time promised

    The gap between the time a guest is quoted at the restaurant's own checkout and the time the order is actually ready to collect or hand over.

  • Guests who come back

    How many first-time guests order a second time. It is the least gameable signal a restaurant produces, because nobody returns out of politeness.

  • What guests say afterwards

    Ratings and written reviews left by guests who actually placed and received an order.

  • Putting things right

    How quickly and how fairly a restaurant deals with an order that went wrong. Every kitchen has a bad night; what happens next is the part worth measuring.

Two limits worth stating plainly

A restaurant needs enough orders to be assessed. A kitchen with eleven orders and eleven happy guests has not been tested, and treating that as equal to a kitchen with several thousand would make the mark meaningless. The minimum is part of the published criteria.

The full criteria are published before the programme opens, not after it closes. What each signal is worth, and where the line falls, will be written down in advance so that any restaurant can read it and know where it stands. Criteria set after the results are known are not criteria.

The timetable

  1. Before it opens

    The full criteria and the minimum trading requirement are published, so every restaurant can read them in advance.

  2. 2027

    The first programme opens and the assessment runs across the trading year. There is nothing to enter and nothing to submit.

  3. December 2027

    The assessment concludes and the year’s list is published. Selected restaurants are told before it goes public.

  4. From publication

    Selected restaurants carry the 2027 mark beside their name until the next year’s list replaces it.

What it is not

  • Not something to apply for. Every eligible restaurant is assessed automatically. There is no entry form.
  • Not for sale. No restaurant can pay to be considered, to be included, or to stay included, and no commercial arrangement between a restaurant and Bitte affects the assessment.
  • Not a food-hygiene rating. Hygiene ratings are issued by your local authority under the Food Standards Agency scheme, and nothing here replaces or reflects them.
  • Not permanent. The mark is awarded for a single year and has to be earned again.
  • Not judged by guests alone. Ratings are one signal among several, so a restaurant cannot be carried by reviews if the orders behind them went wrong.

The first Selection opens in 2027
